3-A Sanitary Standards define hygienic design and material requirements for equipment used in dairy, food, and beverage processing. 3-A Sanitary Standard number 18-03 specifically covers rubber and rubber-like materials used as product-contact surfaces. The requirements center on materials that are non-toxic, cleanable, and free of crevices or surfaces that could harbor bacteria. In practice that means the compound has to be compatible with clean-in-place (CIP) chemicals, and it has to resist both the product it seals and the cleaning regime it faces.
